For the crumble
90 g plain flour
70 g almond flour
70 g butter
70 g sugar
the zest of ½ untreated lemon
pinch of salt
pinch of cinnamon powder
For the cherry base
400 g fresh cherries
2 tbsp sugar
the zest of ½ untreated lemon
Preparation
First prepare the crumble: in a bowl pour the flours, sugar, salt, cinnamon, and finely grated zest of half a lemon. Mix quickly with a fork and add the refrigerated butter cut into pieces. Knead the dough until it is crumbled and place the resulting mixture in the refrigerator for about 15 minutes.
In the meantime, pit the cherries, add sugar and grated zest of half a lemon, mix and distribute the mixture into a single baking dish or use several dishes (depending on how you wish to present the crumble).
Remove the crumbled mixture from the refrigerator and spread it over the cherries, making sure to cover them perfectly and without pressing it. Bake the crumble in a preheated oven at 175 °C for 30 minutes, until the surface is golden. Remove from the oven and serve the cherry crumble warm or at room temperature.
